On the Yeast, L'Antica Quercia's Conegliano Valdobbiadene Prosecco DOCG 2024 BIO is a wine designed for those seeking a territorial, easy-to-read, and concrete wine. Made in Veneto, Italy, from Glera, its profile is consistent with the grape variety and the winery's style. In the glass, it offers agricultural, anarchic, lively appearance, loving soul, dry, authentic, ancient, bold, ambitious, and avant-garde. The soil, a glacial moraine mix with calcareous clay, supports structure, freshness, and a precise flavor. The harvest, hand-picked into crates in late September, highlights a careful selection of the grapes. In the cellar, the whole grapes are pressed and the free-run must is extracted, followed by inoculation of the indigenous rootstock and cool fermentation. Aged for one year in the bottle.
